The History
The sugar supply was cut
off from Finland during World War II and this forced Finland to search
for other potential sugar sources. Finland had no domestic sugar supply
and all their attempts to acquire sugar from other countries had turned
up empty handed. This caused their researchers to begin to look for a
viable alternative. Finland soon rediscovered what chemist Emil Fischer
had previously found and Xylitol became the mainstay sweetener in

As we stated earlier
Xylitol is a sweetener that it is similar in taste to sugar. While the
two substances may taste the same, their difference lies in the fact
that sugar is a strong promoter of the bacteria that causes tooth decay
in babies, and Xylitol is not. Xylitol is made from Xylose which
is made up of five carbon atoms. Sugar is made from
Sucrose which has six carbon atoms. The bacteria that live in
our children's mouth feed upon sucrose with its six carbon atoms because
it is easy to digest. Xylose on the other hand (which is found in
Xylitol) is made up of 5 carbon atoms and cannot be digested easily by
mouth borne bacteria. This inhibits the bacteria's growth and
proliferation. Basically, Xylitol causes those bacteria to starve to
death, from lack of nutrition of all things.... now isn't that funny!
Xylitol is also very slowly metabolized and does not raise insulin
levels. Xylitol's use reduces many of the health problems that can be
associated with a high sugar intake, and as such it can be used safely
by diabetics as a sweetener as well.
